The physalis is also known as the "Cape gooseberry" or "Andean berry." It originates from South America. Our physalis has a slightly sour taste. It is one of the fruits with the highest vitamin C content. In many countries, physalis is also used as a dietary supplement. It is very popular here as a healthy snack because of its exceptionally aromatic properties in various fruit blends.
Properties and production:
• Origin & Fruit Description: Physalis, often called cape gooseberry, belongs to the nightshade family. Originally native to South America, it is now cultivated in various regions worldwide. When fresh, it is covered in a papery covering (called a "lantern"), which is usually removed during drying.
• Manufacturing process: Starting product: Fresh physalis are first cleaned and dehaired (shell removed).
• Drying: The berries are gently dried, either whole or in sliced pieces – for example, by air drying or freeze-drying – to preserve most of the natural nutrients and flavors.
• Processing: the drying process takes place without the addition of sugar or other sweeteners, so that the natural, slightly sweet and sour taste is retained.

• Taste & aroma: Dried physalis have an intense, sweet and sour taste that is concentrated through the drying process.
• Often a slightly fruity and citrusy aroma shines through, making them an interesting ingredient in mixes and snacks.
• Consistency & appearance: The berries shrink when dried and develop a slightly wrinkled, soft to chewy consistency.
• Their color often remains warm, golden to reddish tones.
